Directions
If using freshly cooked rice, spread it out on a tray to cool and let it dry a bit.
In a large skillet or wok, heat vegetable oil over medium heat. Sauté the onion and garlic until fragrant. Add the diced ham to the pan and cook for about 2-3 minutes until heated through.
Push the ham mixture to one side of the pan. Pour the beaten eggs into the other side and scramble until fully cooked. Mix everything together. Add the cooked rice and mixed vegetables. Stir-fry for about 5 minutes, breaking up any clumps of rice.
Pour in the soy sauce and oyster sauce (if using). Stir to combine and season with salt and pepper to taste. Cook for an additional 2-3 minutes. Remove from heat and garnish with chopped green onions. Serve hot.
